Following up on what you said about aetherborn and Planar afterlifes. Do most planes have fleshed out rules for the afterlife? We saw what appeared to be Gideon in theros’ afterlife after dying on Ravnica. I’ve always been curious as to what happens after our favorite characters die. And especially the belief systems of the average citizens on non-god centric planes. E.G. Gruul Gods

Gideon’s thing was not actually in the Theros Afterlife - I’ve discussed that a bunch, but I want to also note that it doesn’t mean it wasn’t “real”.
Some planes have defined afterlives, others do not. Usually they’re where it’s thematically appropriate (top down settings based on real world mythology). In some cases, like Ravnica for a long time, it’s just a random metaphysical side effects.
Cosmically, there is heavy implication that the aether of the Blind Eternities is a sort of cosmic afterlife where souls return when they die. This might be what Gideon experienced. Even with the Theros Underworld, souls eventually fade and become misera, and my assumption is that the Underworld finally loses them back to the Eternities then.

There are non-technological Fomori on Turri Island on Ir.
There were high tech Fomori invaders from another plane in Ixalan’s core millennia ago, and they tried to create a Dyson sphere around the Sun god. They got wrecked and their wreckage was left behind.
You’re caught up!
There’s a lot of supposition out there but those are the facts as they exist right now.

Since aether is, unconfirmed, some primal energy in the very essence of a plane or similar, what does stepping through an Omenpath feel like to an Aetherborn? Or even being on another plane that isn’t Kaladesh?

Aether is richer on Kaladesh but it’s on every plane. I think the only real consequences for an aetherborn off-plane is the same one for everyone else: they might miss out on their home plane’s afterlife. Kaladeshi aetherborn are strongly implied to reincarnate on Kaladesh.

Yes, if you look at his art in some humans are knee-high, and in some they’re ankle-high. IIRC in his story appearance in Dissension he also grows larger.

Just some thoughts on the time of when OTJ takes place: Thunder Junction was vacant (except for cactus folk) before the Omenpaths opened… but in the stories it already has dozens, possibly hundreds of towns, some of which are already abandoned, including abandoned mines. This suggests more than a year or two has passed since the Omenpaths opened up. Even acknowledging a very boom-bust cycle of development, and the Sterling company wasting a lot of resources on risky claims, it feels more like a decade or more has passed since the Omenpaths opened up. I’ll be interested to see if we get a more concrete idea of how much time has passed.

I’ll be interested to see if we get a more concrete idea of how much time has passed.
While it may seem odd for so much to have happened in one or two years, remember that you had a huge influx of dispossessed people with a wide variety of skills and magic, all pooling their resources together to build something new.
And while it can feel unrealistic - there's a big real-life parallel in the American West: The Gold Rush lasted only six years, and they didn't have Magic. San Francisco alone went from 1,000 people to 25,000 people in a single year. Entire towns sprung up almost overnight and disappeared just as fast. In a world with magic, it's not surprising that they'd move just as fast.
Also note: not everything abandoned would have been the Sterling Company, and notice Oko's jab at Saddlebrush to Annie - she clearly knows and recognizes whole towns can get wiped off the map easily out here, especially with the Hellspurs out there. Even her side story features an existential threat to the entire town. Towns can disappear quickly there.
