How do you let people follow you, but you don't follow them back?
If you delete their connection request, they no longer receive notifications of your posts.

One option I have been using is to make a "read-only" (from their perspective) role which doesn't permit posts or replies from them. Then you accept their request and assign them to the read-only role.

Is that so? I was told that it doesn't have any consequences for those who follow you. Besides, if they're on Mastodon, it doesn't matter because Mastodon users aren't notified about your posts anyway. They either scroll down to your post, or they don't.
For contact requests from the Friendica/Hubzilla family, do as follows:
Make at least one contact role that allows connections to send you their posts.
Assign that contact role to everyone whose posts you want to receive.
Make at least one contact role that doesn't allow connections to send you their posts.
Customise your channel role and remove the channel-wide permission for connections to send you posts.
